Specifically, the newly updated 2005 Dietary Guidelines from the U.S. Department of Agriculture (USDA) and the Department of U.S. Health & Human Services (HHS) advise people to balance their calories and incorporate physical activity as two key strategies for weight control. The new guidelines note, “When it comes to body weight control, it is calories that count – not the proportions of fat, carbohydrates and protein in the diet. Successful and sustainable weight loss and weight maintenance strategies require attention to both sides of the energy balance equation (i.e., caloric intake and energy expenditure).”

“Low-calorie sweeteners such as sucralose and the products that contain them offer people a way to manage calories without sacrificing taste. Using reduced-calorie, sugar-free foods and beverages are directly in line with the recommendations of the Dietary Guidelines,” notes Lyn Nabors, Executive Vice President of the Calorie Control Council. Additionally, the American Dietetic Association (a professional organization of more 70,000 dietitians) noted in its 2004 updated position statement on sweeteners, “Thus, it is the position of The American Dietetic Association that consumers can safely enjoy a range of nutritive and nonnutritive sweeteners when consumed in a diet that is guided by current federal nutrition recommendations …” The American Diabetes Association has also stated, “They [low-calorie sweeteners] make food taste sweet, and have no calories and do not raise blood glucose levels. … The American Diabetes Association accepts the FDA’s conclusion that these sweeteners are safe and can be part of a healthy diet.”

“Sucralose is not only a beneficial sweetener but its safety record is undeniable. As noted by the American Dietetic Association and other leading health groups, low-calorie sweeteners can play a role in an overall healthy diet,” added Ms. Nabors.

Sucralose is a non-caloric sweetener, which provides excellent taste. The safety of sucralose is documented by one of the most extensive and thorough safety testing programs ever conducted on a new food additive. More than 100 studies conducted and evaluated over a 20-year period clearly demonstrate the safety of sucralose.

Sucralose is not utilized for energy in the body because it is not broken down by the body but passes rapidly through the body virtually unchanged. It is a safe and inert ingredient. It can be used by all populations, including pregnant women, nursing mothers, and children of all ages. Sucralose is beneficial for individuals with diabetes because research demonstrates that sucralose has no effect on carbohydrate metabolism, short- or long-term blood glucose control, or insulin secretion.

Sucralose was granted approval by the U.S. Food and Drug Administration (FDA) on April 1, 1998, for use in 15 food and beverage categories. The FDA expanded the uses for sucralose in 1999, approving it as a “general purpose” sweetener. In addition to the FDA, the Joint Expert Committee on Food Additives (JECFA) of the World Health Organization and Food and Agriculture Organization has reviewed sucralose and deemed it safe for use.

Recent studies from the American Veterinary Medical Association show that xylitol, a popular sugar substitute, may be dangerous to dogs by causing illness, low blood sugar and possible liver failure. Xylitol-related pet exposures are increasing at an alarming rate, most likely due to the fact that the use of xylitol has become increasingly popular. Pet owners and dog owners especially should be careful to keep products containing xylitol out of the reach of their dogs. Therefore, common practices, such as hiding pills and capsules in sweet treats to convince pets to take their medications, should be monitored very carefully to ensure that products with xylitol are avoided. To bypass this concern, pet owners can rely on flavoring their pet’s medications with products such as FLAVORx to ensure pet-approval and compliance.

Xylitol is present in products such as sugar-free chewing gum, candy, baked goods, diet items and toothpastes. In 2003, the American Society for the Prevention of Cruelty to Animals (ASPCA) recorded only 3 xylitol poisonings. In 2004 however, the number had jumped to 70 and, in 2005 over 170 cases were reported. Between January and August 2006, 114 cases have already been reported. In dogs, xylitol triggers the release of insulin, leading to hypoglycemia, more commonly known as low blood sugar. Though concrete studies have yet to establish a cause-effect relationship between xylitol and liver damage and bleeding disorders in dogs, the initial studies heavily indicate that the bottom line is that dogs are at risk.

Owners commonly use treats to reward pets, as well as to hide pet medications. Cheese, sausages and sweets are frequently used to disguise pills and capsules. However, these types of ‘delivery systems,’ while safe for humans, can be problematic because pets have different absorption and digestion than their owners. In addition, many of these treats may be high in fat, calories or sugar-content, making them potentially unsafe for pets, especially those already receiving medication for health issues.

Using a flavoring system like FLAVORx safely flavors liquid medications with FDA-approved and pet-approved flavors such as Crispy Bacon, Red Angus Beef and Salmon Steak. Additionally, pill and capsule medication can be converted to suspension and then flavored. May is teaming up with the Worthy Institute, WellCare Foundation and the American Heart Association to present the 2009 Arizona Children’s Obesity Conference: A Community Taking Action.

May’s co-sponsorship of the event represents both a personal and a professional concern over the rapidly increasing rates of childhood obesity. In its latest Scientific Statement, the American Heart Association boldly said that added dietary sugars lead to cardiovascular disease. Administrators from the Arizona Department of Health Services will join with health care professionals from both the private and public sectors to share information and exchange ideas as to how the State, schools and communities can develop and implement strategies to successfully combat childhood obesity. One of the changes that the Arizona Department of Health Services has already made is to change the regulations in the Women, Infant and Children (WIC) nutrition program to promote healthier eating.

Holiday Baking: 6 Tips for Healthier Holiday Cookie Baking

Many of us put our healthy eating habits on hold during the holiday season, typically gaining 7-10 pounds between Thanksgiving and New Years Day.

According to Cookie-Crazy.com founder Bonnie Lowe, “This is, undoubtedly, the most challenging time of year for people who are trying to eat healthy meals. But it doesn’t mean we have to give up!”

Lowe offers six tips that can help you maintain healthy habits while enjoying one aspect the season’s tempting traditions: holiday cookie baking.

1. Reduce the fat in your favorite recipes.

“Believe it or not, there really are some simple substitutions for cookie recipes that will reduce the fat, yet keep the flavor,” Lowe says. “But these substitutions may not work for all recipes. Some low-fat and fat-free ingredients don’t stand up very well to heat; some have different amounts of water which can affect the texture of your cookies. Sometimes using cake flour instead of all-purpose flour can help with cookie tenderness.

“You’ll need to experiment a bit to get the best results, but it’ll be worth it!”

Here are some substitutions to lower the fat (or the amount of saturated fat) in your favorite cookie recipes:


Instead of butter or margarine: use light butter, fat-free cream cheese, or even applesauce (you may need to reduce the amount of liquid elsewhere in the recipe).

Instead of shortening: use butter or margarine or light butter.

Instead of an egg: use an egg substitute (amount as indicated on label) or 2 egg whites.

Instead of chocolate chips: use mini-chocolate chips.

Instead of chocolate: use unsweetened cocoa powder (3 tablespoons for 1 oz. chocolate) and 1 tablespoon canola oil.

Instead of nuts: use crispy rice cereal.

Instead of peanut butter: use a reduced-fat peanut butter.

Instead of whole milk: use skim milk.

2. Reduce the amount of sugar called for in your recipe by about one-third. This can often be done without affecting the taste or texture.

3. Use alternative forms of sugar rather than granulated sugar. Here are some suggestions:

Honey. Use 3/4 cup plus 1 tablespoon honey in place of 1 cup sugar; reduce other liquid ingredients by about 2 tablespoons. Cookies made with honey will tend to brown faster.

Fruit juice concentrates. Use 3/4 cup of fruit juice concentrate (apple juice and orange juice concentrates are good) for every cup of white sugar; reduce other liquid ingredients by 3 tablespoons.

Molasses. Use 1-1/3 cups molasses for 1 cup sugar; reduce other liquid ingredients by about 5 tablespoons. Your cookies will look darker and may not taste as sweet.

Maple syrup. Use 3/4 cup maple syrup for 1 cup of white sugar; reduce other liquid ingredients by 3 tablespoons.

4. Use artificial sweeteners with sugar. “Notice I didn’t say use artificial sweeteners INSTEAD of sugar,” Lowe said. “You don’t want to eliminate sugar altogether, because sugar helps to keep cookies tender and moist. But you can use artificial sweeteners WITH sugar to reduce the amount of calories. For best results, try half-and-half (for example, if your recipe calls for 1 cup of sugar, use ½ cup of sugar and ½ cup of an artificial sweetener).”

Artificial sweeteners that are suitable for baking include saccharine (Sweet and Low®); acesulfame potassium (Sunette® or Sweet One®); and sucrolose (Splenda®).

Aspartame (Equal® and Nutrasweet®) is not good for baking, but can be used in no-bake cookie recipes.

For all artificial sweeteners, be sure to read the label for sugar substitution tips.

Note that your cookies may tend to bake faster with some artificial sweeteners, so keep an eye on them.

5. Use sugar-free ingredients. There are sugar-free versions of many popular products. If a recipe calls for jam or chocolate, for example, try using sugar-free versions.

6. Spray cookie/baking sheets lightly with vegetable cooking spray instead of greasing them with shortening or butter.

In summary, Lowe says these suggestions will take some trial and error on your part. “But with a little experimentation and creativity, you can make your holiday cookie baking a healthier, yet still delicious tradition!”
